Thai Hot & Sour Soup Recipe


1-2 red chillies, chopped
2 tsp palm sugar
1 stick of lemongrass, tough outer layers removed, sliced
3-4 coriander roots
Juice of 3 limes
2 tbsp Thai fish sauce( nam pla)
1.2l fresh chicken stock
12 cleaned raw king prawns
8 shiitake mushrooms, sliced
soy sauce

Pound together the chillies, palm sugar, lemongrass and coriander roots in a mortar and pestle to a coarse paste. Add the lime juice and fish sauce and pound until well combined. Alternatively, lightly blitz in a food processor.
Bring the stock to the boil in a large saucepan. Add the prawns, shiitake mushrooms and enough of the spice mixture until the required taste is achieved. Cook for 3-4 minutes. Serve immediately, with soy sauce to taste
