Irish Caramel Custard Dessert
1/2 teaspoon vanilla extract
2 cups whole milk, scalded
1/4 cup granulated sugar
2 eggs + 2 egg whites
1/2 cup brown sugar
1/8 teaspoon salt
1. Spray a 3-quart baking dish or mould with nonstick vegetable spray. Sprinkle brown sugar over the bottom.
2. In a medium bowl, beat eggs and egg whites until light and lemon-coloured. Add granulated sugar and salt. Mix thoroughly.
3. Stir in the scalded milk and add the vanilla. Pour mixture over brown sugar. Place the baking dish or mould in a pan of hot water, 1-inch deep.
4. Bake at 350º Fahrenheit for about 50 minutes, or until firm and toothpick inserted in centre comes out clean.
