1 1/2 cups [375 mL] all-purpose flour
1 teaspoon [5 mL] cinnamon
1 teaspoon [5 mL] grated lemon rind
1/4 teaspoon [1 mL] salt
1/2 cup [125 mL] packed brown sugar
1/2 cup [125 mL] softened butter
1 egg, separated
3 1/2 ounces [100 g] sliced almonds [1/2 cup / 125 mL]
2 tablespoons [30 mL] sugar
1/2 teaspoon [2.5 mL] cinnamon
Into a small bowl, combine flour, cinnamon, grated lemon rind and salt; set aside.
Into a medium bowl, using an electric mixer, beat together brown sugar, softened butter and egg yolk, until fluffy.
Slowly beat in flour mixture, until well combined.
Evenly pat mixture over base of a 9-inch [23-cm] square baking pan.
Brush evenly with egg white.
Into a small bowl, combine all topping ingredients [almond slices, sugar and cinnamon].
Sprinkle topping evenly over bars.
Bake into a preheated 350°F [180°C] oven for 25 to 30 minutes, until golden brown.
Cool in pan, before cutting into bars.
